Sometimes you just need a dump night. Since I became pregnant…I want soup. Soup with potatoes or those homemade noodles. Mmm. Anyway….I wanted soup but didn’t want to go to the store. Here’s the concoction that ensued. We now have the soup we call Poverty Soup 🙂 a lot-with many variations. Everyyyyyyyone in this family devours it.
We serve it with crescent rolls if we have them.
In a big ‘ol pot:
Chop up a yellow onion (white would be fine too) and cook it until soft.
Add a pound of ground beef or ground turkey or italian sausage…whatever beefy
Add a big can of diced tomatoes (I think it is 29 oz. or two of the smaller cans) or you can use crushed or whole tomatoes and put them in the blender or you could use stewed…whatever. You get the point.
Add 3-5 cloves of chopped garlic (we use 5)
2 Tablespoon of balsamic vinegar
6 cups of beef broth or stock (make this with bouillon cubes if you don’t have any broth)
1 tsp. salt
Throw in a cup or two of uncooked little pasta like ditalini, mini pene, we’ve used barley…you could put in homemade noodles (even the homemade ones you buy at the store 🙂 and then simmer for about 10 min. or until pasta is cooked.
Toss in some Kale (or not)
and serve topped with parmesean cheese (or not)
Then…if you need some chocolate like me 🙂 make these dump bars (best brownies ever! Thank you Tanya. I loooooove these!!)
2 cup sugar
1 3/4 cup flour
1 tsp salt
1/2 cup cocoa powder
add 5 eggs
1 cup vegetable oil
1 tsp vanilla
Pour in a greased (with Pam) 9 1/2 x 13″ pan (**Very important to use this size tho)
Throw some chocolate chips or white chips or peanut butter chips or butterscotch 🙂 or none…on top
Cook at 350 for 30-40
Sprinkle with powdered sugar…or not.
